Every school holidays I make an effort to get the kids in the kitchen. Possum (aged 8 years) and Boo (aged 5 years) love it. They can practice their cooking skills, we can talk measurement and they enjoy a sweet treat at the end.

Do you remember the crunchy deliciousness of honey joys as a child?
I have fond memories of making sticky honey joys and them being a staple at every friends birthday party. They certainly are a great idea for birthday parties.
Delicious honey joys recipe to make with kids
To make these crunchy honey joys I was inspired by this recipe.
To make them yourself, you will need –
- 12 x patty pans
- 4 cups Kelloggs cornflakes
- 1 cup honey
- 1/3 cup sugar
- 90g butter
For this recipe I used local honey and my absolutely favourite in the world is this runny and delicious Surfcoast Honey.
For this honey joy recipe, you’ll also need –
- saucepan
- large bowl
- spoons
Begin by creating your wet ingredients.
Add the butter, sugar and honey. Stir it continuously until it froths up and becomes golden and bubbly. At this point the sugar granules should have dissolved. Yum.
Add your golden and crunchy cornflakes to a bowl.
Mix through your wet ingredients and coat the cornflakes well.
Use two large spoons and scoop the coated mixture into the patty pans.
You may need to work quite quickly as they will begin to set and harden.
Once you’ve prepared all the mixture in the patty pans, add them to a preheated oven at 150C (or 302F) for 10 minutes.
This simple and delicious honey joy recipe will be one you find you go to again and again. It’s a real winner.
These are such a great sweet treat too and make a lovely little extra in a lunchbox or to take to a party.
