How to make a healthy watermelon cake
It was roughly about this time last year that my husband and I discovered that little Possum was severely allergic to egg, she is anaphylactic to be exact. It was since her allergy test confirmed this that I felt an overwhelming determination to find fabulous egg free alternatives to many of the foods that children enjoy. 

On the weekend we enjoyed a lovely family BBQ for Possum’s 2nd birthday. When deciding on what type of cake to prepare I thought about her favourite foods. Top of the list would be watermelon. And so I give you a tutorial on how to make a watermelon cake. LOL

How to make a healthy watermelon cake

You will need

  • Large watermelon
  • Various fruits
  • Knife
  • Platter for serving

Slice the watermelon across the top using a serrated knife and carefully remove the thick skin. This is really quite challenging so be very careful. Once you have removed the skin you can start shaping the watermelon into whatever shape you decide. I initially wanted it to be a typical cake shape, however, the size and shape of the watermelon I had didn’t really allow for it. Didn’t matter though. 

I’ll be honest, removing the skin was quite challenging so it’s best done by an adult and not children. I’d leave the decorative final touches to the children.

Once I’d shaped my watermelon, leaving the left overs for the warm farm, I found a huge crack down the middle. I was quietly thrilled because it allowed me to fill it with some mixed fruit and juice.

Next came the fun of decorating the top of the watermelon cake. 

Carefully cutting slabs of cantaloupe I used a cookie cutter to create interesting decorations.

Here I am decorating the top of the shaped watermelon with a variety of delicious fruits just prior to it being served. You could add cream, passionfruit or similar to the top but I chose to keep it simple. 

The candles were also added once all the fruit was in place.

What a fantastic alternative to a baked cake!!! 

And so much healthier.

Our guests were absolutely blown away by this birthday cake and everyone chose to have a piece. Possum especially enjoyed her birthday cake and that was a satisfying feeling for me as her mum.

    We made a watermelon cake today for my son’s third birthday – thanks for the idea 🙂 So easy and the kids loved it! My son was so attached to – he said “That was the BEST cake EVER!” hehe
